Ingredients  

Brownie Layer: 

Fudge Brownies by Active Collagen - Recipe accessible via Instagram

 

Strawberries + Cream Layer: 

2 cup frozen strawberries 

3/4 cup coconut cream full fat refrigerated part 

1 cup soaked overnight cashews 

1/2 cup soaked overnight dates 

2 scoops active collagen 

 

Chocolate Topping:

300g dark chocolate 

1 tbsp coconut oil 

 

Directions

  1. Prepare Fudgy Brownies as per recipe posted on Active Collagen Instagram.

  2. Allow Brownies to cool in the tin. 

  1. Meanwhile, prepare strawberries and cream filling. 

  1. Add all strawberries and cream ingredients to a high-speed blender or food processor and blend for 2-3 minutes or until creamy and smooth. Use a tamper to assist in blending.

  2. Pour and evenly spread strawberries & cream filling over the cooked + cooled brownies.

  3. Place into freezer overnight or until filling has set. 

  1. Prepare chocolate topping by melting chocolate using desired method and mixing in coconut oil well. 

  1. Remove tin from freezer and pour chocolate sauce over the top of the frozen brownies. Evenly spread with the back of a spoon or spatula and place back into freezer until chocolate has set. 

  1. Slice brownies into 9-12 square servings and enjoy! 

 

Recipe notes 

- Cashews must be soaked for a minimum of 4-6 hours for this recipe to work. Add natural cashews to an airtight container with 1.5 times the amount of water. Soak for a minimum of 8 hours.

- Soak pitted dates overnight in a container with water for at least 6 hours. tip** the night before - prepare dates, cashews.

- Enjoy the bars immediately or store in fridge (if eating layer that day and prefer them to be a bit gooey). Always store in freezer (for up to 3 months) in an airtight container.

- When serving from freezer, allow bars to warm to room temperature for about 10-15 minutes on the bench before eating!
