Ingredients:

  • 1 egg

  • 1 cup plant milk

  • 1/3 cup olive oil

  • 1 tsp vanilla extract

  • 1 1/3 cup wholemeal flour

  • 1 tbsp baking powder

  • Pinch of sea salt

  • 2 tbsp Active Collagen All-In-One powder

  • 1 tbsp coconut sugar

  • Desired toppings to serve.

 

Method:

  1. Whisk eggs, milk, oil and vanilla extract together in a large mixing bowl. 

  2. Sift flour into the mixing bowl. Add baking powder, salt, collagen powder and coconut sugar. Whisk until just combined. 

  1. Heat a large non-stick fry pan over medium-high heat. Equally, divide batter into smaller portions, using approx. ¼ cup of batter per pancake. Cook 3 pancakes at a time, for 2 minutes or until bubbles appear at the surface, flip and cook until both sides are lightly golden brown. Transfer to a plate and cover with foil. Repeat until all remaining mixture is cooked. 

  1. Serve pancakes with maple syrup, berries or other desired toppings. Enjoy!
